Every year when your audiometer is calibrated a new baseline audiogram should be run. Your daily calibration is compared to that baseline audiogram. It needs to be within 10 dB at every testing frequency.

Yes, before you run your baseline audiogram a person should put on the headset. They should present tones and manipulate the headset cables to ensure there is not any static or intermittency.
